Cal. Code Regs. Tit. 22, § 76369 - Food and Nutrition Services-Modified Diets
(a) Modified diets shall be as follows:
(1) Specified by the client's
interdisciplinary team with a copy in the kitchen.
(2) Planned, prepared and served by persons
who have received training in food and nutrition services.
(3) Periodically reviewed and adjusted as
needed.
