12 CCR 2510-1-10.412.71 - Food Safety and Sanitation [Rev. eff. 12/1/10]
A.
Nutrition service providers shall comply with the applicable provisions of
federal, state or local laws regarding the safe and sanitary handling of food,
equipment, and supplies used in the storage, preparation, service and delivery
of meals to older adults, including, but not limited to:
1. The Colorado Department of Public Health
and Environment's (CDPHE) "Colorado Retail Food Establishments" rules and
regulations (6 CCR 1010-2);
2. Health, fire, and safety codes and
regulations; building codes; purchasing regulations; licensure requirements;
and any other federal, state, or local requirements as may be
applicable.
B. Current
food permits shall be posted at the nutrition site.
C. Inspection reports issued by the CDPHE
shall be on file at the site and available for review.
D. If a nutrition project requests a variance
from the CDPHE, the nutrition project shall send copies of both the variance
request and the approval or denial from the CDPHE to the SUA and to the
AAA.
