410 IAC 7-21-32 - "Scheduled process" defined

Sec. 32.

"Scheduled process" means the process selected by a processor as adequate for use under food manufacturing conditions to achieve and maintain a food that will not permit the growth of micro-organisms having a public health significance. The term includes control of pH and other critical factors equivalent to the process established by a competent processing authority.
